Ethereal, dry, buoyant.
The Winemaker's Cut wines come from just south of Oliver. In the process there are no pesticides or herbicides used in their vineyards, which means a focus toward natural wines. Ideally, in the winery, they use only native yeast, no, or minimal fining (only bentonite and time), and very light or no filtration at all.
The gloriously palest-of-blushing-pink 2019 vintage is made from Cabernet Franc with 10% Syrah. Notes of tangerine and honey, peach skin and finely ground white pepper are buoyed by tangy red fruit. The palate is pristine and dry, racy and ethereal. A jubilant rose with balance and structure, but even more so, freshness.
