Costiere de Nimes' most notable winemaker Michel Gassier of Domaine Gassier, makes this regional blend of Mourvedre (49%), Grenache (35%) and Syrah (16%).
According to the label, the wine is baptized by the area's regional bull, a noble adversary in their ancestral tradition of bull games where [thankfully] man is pursued by bull, not the other way around.
Having significant age in bottle already the wine shows notes of wild briary berries along with balsamic, molasses, salt aged meat and cigar. Strong umami flavours echo the nose and age has nicely softened the Mourvedre. It has a silky texture ans fine integrated tannins--the balance is here, but its time has run out. Drink now.
