Organic, zesty, delicate.
An organic Blanc de Noir, made from Pinot Noir, which was whole bunch pressed to concrete tank for natural fermentation. Later that fall it went through a secondary fermentation and was aged sur lie. After 20 months the wine was disgorged and finished with no dosage, which resulted in this dry bubbly. A pale straw hue, it offers aromas of melon rind and apricot stone, wild honey, yellow apple sauce and bread dough. It has distinct salinity and minerality, akin to licking a stone. Zesty additional flavours of lemon peek and starfruit are wrapped up in a creamy, yeasty palate with delicate bubbles.
