Juicy, fresh, supple.
The cooler-climate Adelaide Hills in South Australia is home to Sidewood, a family owned winery, cellar door and restaurant established in 2004. They produce roughly 600,000 bottles annually from 91-hecates of vine.
This 100% Shiraz was partially whole berry fermented to create a partial carbonic maceration; it went through a malolactic fermentation as well and aged in French oak (about 25% new) for 12 months.
Notes of white pepper and salted licorice, mulberry, Umeboshi plum, vanilla cocoa and coffee lead to a fresh palate with great balance. It has notable sapidity and while weighty, it's not jammy. It's smooth and chic with a coffee/cocoa flavoured finish.
