Hester Creek's inaugural release sparkling Blanc de Blanc is made entirely from old vine Pinot Blanc grapes from the estate's Golden Mile Bench vineyard.
It was whole cluster pressed and the resulting juice was cold settled for three days then racked to a stainless steel tank for primary fermentation. After a 24 day cold fermentation the wine was racked off the heavy lees and further aged in stainless on the fine lees. The base wine was laid down for 24 months on lees to develop the classic traditional method autolytic characters. Following riddling and disgorging, the winemaker added a proprietary dosage to the finished product.
This second vintage is a joyful bubbly with wildflowers, honey, pink grapefruit and an orchard fruit-cup. The palate is just as jubilant and expressive; purity and levity with lively bubbles and a zesty finish.
