For more than 100 years the Medici family as made quality Lambruscos; today they own 60-hecatres across Emilia in the region of Emilia~Romana.
The Phermento is a natural wine made from Lambrusco, they refer to it as the ancestral method of sparkling wine production method, which uses yeasts and sugars of the actual grapes as opposed to adding selected conventional sugar and yeast.
An unflitered frizzante with a hazy ruby hue, this juicy wine produces aromas of cherry kool-aid and dried roses, honey and tangerine and raspberry tea. Echoing the nose, the palate offers raspberry and orange pekoe tea, clay and wet stone flavours. It has a vivace prickle on the tongue, is pristine with a pithy finish.
Pairs great with Gone Crackers Undressed.
