Structure, concentration, consistency.
Oliver-based Burrowing Owl has maintained a house style and quality consistently over the years and this Cabernet does not differ. Expect cassis, sunbaked earth, peppery spices, dark chocolate and espresso with just enough grilled green peppers at the core to add some freshness. The palate is smooth and fresh with spice, dark fruit and mocha to mimic the nose. Supple, generous, smooth.
Oliver-based Burrowing Owl has maintained a house style and quality consistently over the years, it was aged in a mix of French, American and Hungarian oak for 18 months then bottled unflitered. Expect notes of red currents and leather, toasted brown spices and red cherries with earth and cocoa along with mocha. Stylish, toasted, creamy.
This handpicked estate Chardy was fermented in tank (15%) and oak (85%) with different strains of yeast to add complexity; it went through partial mololactic fermentation and was aged 8-months in assorted oak barrels. Spiced butter and lemon curd, toasted oak and vanilla aromas are layered with grilled golden apples, pineapple and musk melon. The palate is equally toasted and rich; butterscotch, vanilla and spiced nut flavours dominate. It has a creamy demeanor carved of by bright acidity.

Second review: November 2024 Hazelnut biscuit, lemon meringue, honey, toasted spices, yellow apple, vanilla and acacia aromas appear on the nose. In the mouth it is fresh and nutty with apple turnover and toasted spice flavours; there is a slight salinity on the finish with a hint of oak. Slick, fresh, creamy.
This handpicked estate Chardy was fermented in tank (25%) and oak (75%); it went through partial mololactic fermentation and was aged in assorted oak barrels for 10 months.
Aromas of honeycomb and toasted nuts, yellow apples and grilled lemon and acacia blossoms. It has a creamy palate with toasted undertones. Concentrated and slick you can expect stone fruits, nuts and spice flavours.

Stylish, refreshing, expressive
A lovely juxtaposition of fresh and fruity, the 2013 BOV is sweetly buttery, warmly spiced and offers dried pineapple chunks, Bosc pears, vanilla, orange blossoms, lemon zest, white pepper and star anise on the nose. It is smooth and juicy with a creamy edge with lovely fruit expression and a tangy finish. Stylish, but it doesn't take itself too seriously - a current trend in Chardys.
